feat(#78): Migrer ProfessionalInfoFormScreen vers infrastructure multi-modes

Adaptation responsive du formulaire d'informations professionnelles (AM Step 2) :
- Desktop : photo gauche (270px) + champs droite
- Mobile : layout vertical avec photo 200px + champs empilés
- Boutons CustomNavigationButton (violet/vert) sous la carte en mobile
- Chevrons uniquement en mode desktop
- Espacement adapté (12px mobile vs 32px desktop)
- Tailles de police adaptées
